Business partners Michael and Marge Parlamis and Victor Rosasco began welcoming luncheon patrons on Jan. 15, and officially opened for dinner on Valentine’s Day. Under the direction of Rosasco as the restaurant’s culinary consultant, Ridgewood Fare’s full-time on-site Chef de Cuisine David Paglia prepares all of his dishes – including the soups, salads, and entrees -- from slow growth hormone-free proteins, sustainable fish, and organic produce. It is also worth mentioning that all baking and desserts are made on premises. On site manager Toni DeLisi notes that, although Ridgewood Fare is new, partner Victor Rosasco is well known in this area through his former association with another top Ridgewood restaurant he opened 25 years ago. Many of Rosasco’s fans are pleased to hear he returned to the area with this new venture. “We have been well received; we’re very fortunate,” DeLisi says. Ridgewood Fare is not only a restaurant but also a full-service catering business. “Because of my background in wedding and event planning, we are able to offer a complete package to anyone planning an event, be it social, corporate, or not for profit,” DeLisi says. Ridgewood Fare is open Monday, Tuesday, and Wednesday from 11 a.m. to 7 p.m. and Thursday, Friday, and Saturday from 11 a.m. to 10 p.m. Lunch is served every day; dinner is available Thursday through Saturday only.
