This month, children around the country will be thinking of innovative ways to treat their mothers in a special way for Mother’s Day. While moms appreciate any and all efforts from their children, there is the secret hope that this year they will get to experience something truly special. It’s up to you to make it a reality for your mom. Classic Mother’s Day gifts involve breakfast in bed, poems, photos, and handmade items -- especially from younger children. Older children can go a step further and create a day where the memories will last the entire year. Spa vacations or day trips are a growing trend and gift that will truly be appreciated by a mother who enjoys a little pampering. Hosting a spa party for your mother, and perhaps a few other lucky female relatives and friends, can be a unique way to show you care. Many people want to cook something special for their mothers on Mother’s Day, but don’t know where to begin. Showing Mom your appreciation doesn’t require a lot of know-how in the kitchen, nor a gourmet, fourcourse meal. Simple fare, such as items that can be enjoyed for a brunch or light lunch, will certainly fit the bill. Quiches often are a one-bowl creation that do not take a lot of time or ingredients to create. You can vary the ingredients to cater to Mom’s palate. For a refreshing and easy summertime quiche, try this Zucchini Quiche for Mother’s Day or entertaining throughout the summer season. Zucchini Quiche Makes 6 to 8 slices 3 cups unpeeled zucchini squash chopped into bite-size pieces 4 eggs, beaten 1/2 cup grated parmesan cheese 1/2 cup vegetable oil 1 medium-size onion, chopped into small pieces 1 cup pancake mix, such as Bisquick brand Salt and pepper to taste Preheat the oven to 350 F. Mix all ingredients in a bowl except for the zucchini. Add the zucchini to the batter and toss to coat. Pour the batter into a 9-inch glass pie plate. Bake for about 40 minutes, or until top is golden brown. Serve slices warm with a side salad.
